The restaurant at La Borde is called "Mémoire". In a nod to memories, to moments that remain engraved, like the tastes and smells of a lovely dish. The chef is keen to work with seasonal vegetables and fruit. As a result, the menu is short but responsible, to reflect the flavors of the moment. It's not unusual to see the chefs filling their baskets with fresh fruit and vegetables from the château's kitchen garden.
